Orange Dreamsicle Salad

Growing up in the midwest, these fluffs or “salads” were part of nearly every holiday or church function when I was younger.  While this year, our holiday celebration is certainly simplified, my husband  and I decided that we should have a fruit salad on the table.   I do admit that calling it a salad is pretty funny, but then again, it might be the only form of fruit of vegetable I can get into my youngest tomorrow, so salad it is!

 

Orange Dreamsicle Salad

1 small box orange gelatin

1 cup boiling water

1/2 cup cold water

1 small box instant vanilla pudding

1 1/2 cups mini marshmallows

1 – 14 ounce can mandarin oranges, drained

1 – 8 ounce container cool-whip, thawed in the refrigerator

Directions:

In a medium sized mixing bowl, whisk together boiling water and orange gelatin until it is dissolved.  Whisk in cold water.   Place the mixture in the refrigerator for 15 minutes.  Whisk in the vanilla pudding, powder only, and place the mixture back in the refrigerator for 15 minutes.  Fold in marshmallows and oranges.  fold in 1/3 of the cool-whip.  Once evenly combine, fold in the remaining 2/3 cool-whip.  Let chill in refrigerator before serving, at least 2 hours.

Note:  sugar free or lite versions of the pudding, gelatin, and whipped topping can be used in the recipe.
