Lemon Cloud Cookies

These cookies are perfect for a summer days and are sure to be gone in a flash!  They couldn’t be easier and require only 4 ingredients.  Cake mix, whipped topping, an egg, and powdered sugar.  That’s it!  You can get creative and make these with any flavor cake mix you like.  Strawberry is a fun one, too!

Lemon Cloud Cookies

1 box lemon cake mix

8 ounces of thawed frozen whipped topping

1 large egg, whipped with a fork

1/2 cup powdered sugar

Directions:

Preheat oven to 350 degrees.  Line sheet pans with parchment paper and set aside.  Place powdered sugar into a small bowl and also set that aside.  In a large mixing bowl, combine cake mix, whipped topping, and egg.   Stir with a wooden spoon or rubber scraper until evenly combined.  The mixture will be sticky.  Drop dough by the tablespoon sized piece into the powdered sugar and roll to coat.  Place the cookies on the lined sheet pans.  Bake for 12-14 minutes depending on the size or your cookies (you can test one or 2 before you bake the entire bunch)  You want the cookies to be puffed up and the edges just to have started to turn golden.   Let cool on the pans for 5-10 minutes and then transfer to a cooling rack.  Store in an airtight container.
