Slow Cooker Caramelized Onions

Caramelized onions are one of my favorite things to have ready to use in my fridge or freezer. A few times this summer I have found myself with an abundance of onions and I hate for them to go to waste, so about once a month I have been putting my onions into my Crock-Pot for the day and caramelizing them. When they are done I am left with perfectly tender, golden brown, wonderfully sweet onions. At that point, I freeze them in muffin tins or quart bags to use in french onion soup later or for dinner that night to top steaks, pork chops, chicken, or even pizza and pasta!

Slow Cooker Caramelized Onions

7-9 – medium-sized yellow onions, peeled and cut into half-moons (enough to fill the crock of your slow cooker)

2 tablespons olive oil

2 tablespoons butter

1 tablespoon brown sugar (optional)

1 teaspoon kosher salt

1/2 teaspoon cracked black pepper

Directions:

Spray the inside of your slow cooker before add in onions and all remaining ingredients. Stir, cover, and cook on high for 7-8 hours or low for 10-11 hours. Stir once during cooking.
