Roasted Rosemary Cashews

2 cups raw cashews

1 tablespoon olive oil

1 tablespoon rosemary, finely chopped

1/2 teaspoon cracked black pepper

1/2 teaspoon course sea salt (more or less as desired)


Preheat oven to 375. In a mixing bowl, combine all ingredients and toss until the cashews are evenly coated. Spread the cashews out onto a parchment-lined sheet pan in a single layer. Roast for 10 minutes. Stir. Roast for another 5-10 minutes or just until the nuts have started to turn golden brown. Let cool slightly before serving.
