Garam Masala Caramel Corn

This recipe is one that you are either going to love me or hate me for giving to you.  Not because it’s bad, but because it’s THAT good and it’s so easy!

Fresh homemade caramel corn is already a treat, but the garam masala takes this to a whole new level.  It’s perfect for breakfast, lunch, snacks, dinner, late nights…..I think you get my drift.  😉

Garam Masala Caramel Corn

8 cups popped popcorn, butter flavor

1 stick butter

1/2 cup brown sugar

1/2 cup light corn syrup

1/2 teaspoon kosher salt

3/4 teaspoon baking soda

1 tablespoon Garam Masala

Directions:

Place popcorn in a large mixing bowl and set it aside.

In a microwave-safe bowl, combine the butter, sugar, corn syrup, and salt.  Microwave on high for 2 minutes.  Stur.  Microwave again on high for 3 minutes.  When the mixture starts to boil, microwave for 1 minute longer.  Remove the bowl from the microwave and stir in the baking soda and garam masala.  The mixture will foam slightly.

Pour the mixture over the popped popcorn and stir until it is evenly coated.  Spread the popcorn out onto a sheet pan and let cool slightly before eating.  Store in an airtight container.
