Garam Masala Sweet Potato Soup

Fall is just around the corner and this soup is sure to help you get your house smelling like it! The warm smells of the cinnamon, ginger, pepper, and garam masala spice blend are sure to have you feel cozy even in the coolest of weather.

Garam Masala Sweet Potato Soup

2 cups diced yellow onion

1 1/2 cups diced celery

12 cups peeled and cubed sweet potatoes (about 8 medium potatoes)

1 teaspoon kosher salt

1/2 teaspoon cracked black pepper

1 teaspoon cinnamon

1 teaspoon ground ginger

3/4 teaspoon garlic powder

2 1/2 garam masala

4 cups vegetable broth

3 cups water

Directions:

Turn you Instant Pot on to saute. Add olive oil, onion, and celery. Stir and let cook until onions are translucent. (about 4-5 minutes) Add the remaining ingredients to your instant pot. Stir. Place the lid on the pot, turn the valve to seal, and cook on manual – high pressure for 15 minutes. Allow to natural release. (This will take about 15-20 minutes) Once pressure is released, carefully remove the lid of the pot and use a hand blender to blend soup until it is smooth. Serve.

Note: If you do not have a hand blender, you can use a regular blender, but allow the soup to cool a bit before blending.

Note: If freezing, allow to the soup to cool before sealing your freezer containers or bags.
