Fruit Cocktail Cake

This is a cake that my grandma used to make….I remember it so well.  Still a little warm from the oven, the crunchy top, piled with whipped cream.  It was extra special if you got a piece with cherry in it!  I used to ask her for the recipe and she always said that I didn’t need one because it was simple.  This week, with my kids home from school and a can of fruit cocktail in the pantry, I figured I would give the recipe a shot.  She always said it was a “1 of everything” cake and now I know why!

Fruit Cocktail Cake

1 – 15 ounce can fruit cocktail, with syrup or with juice

1 cup flour

1 cup sugar

1 teaspoon baking soda

1 egg

1 teaspoon vanilla extract

1/2 cup brown sugar

whipped cream for topping

Directions:

Preheat oven to 350 degrees and grease a 9×9 baking baking pan.  In a medium mixing bowl, combine the fruit cocktail, flour, sugar, baking soda, egg, and vanilla.  Stir until combined.  Pour the mixture into the prepared baking pan and sprinkle the top of the batter with the brown sugar.  Bake for 30-40 minutes or until the top is dark golden brown and the batter is cooked through.

Let cool, top with whipped cream to serve.
