Cashew Milk Chocolate Chip Cookies

We have been having a cold snap here in North Dakota this week and that has my kids begging for hot chocolate after they get in the door from school and me craving warm, chocolatey baked goods and coffee!  These cookies just might become your new best friend.  They are so familiar and comforting because of the chocolate chips, yet different and almost feel more “adult” because of the addition of the rich, buttery cashews.  What’s not to love about chocolate and cashews?  Kids and grown-ups are sure to gobble these up!

 

Cashew Milk Chocolate Chip Cookies

2 1/4 cups all-purpose flour

1 teaspoon baking soda

3/4 teaspoon salt

1 cup butter, softened

3/4 cup packed dark brown sugar

3/4 cup granulated sugar

2 teaspoon vanilla extract

2 large eggs

1-12 ounce package milk chocolate chips

1 1/2 cups chopped cashews, roasted and salted

Directions:

Preheat oven to 375.  Combine flour, baking soda, and salt in a small bowl.  In another bowl, beat softened butter until light.  Add sugars and blend until combined.  Add vanilla and eggs.  Beat well.  Gradually add the flour mixture.  Gently fold in the chocolate chips and chopped cashews.  Scoop cookies onto parchment line baking sheets.  (I use a  #30 food scoop)  Bake for 9-11 minutes or until cookies are a light golden brown.  Remove from the oven and cool slightly before serving.
