Biscuit “Bubble” Pizza

There isn’t anything new about this recipe that I am sharing with you today, but it sure is a favorite of my kids!  (ok….I find it pretty good, too!)  I haven’t made this for a long time and the kids were asking for it the other day.  While I usually try to keep our lunches a little lighter, I had a busy day making cakes and it just felt like a good day for a pan of comforting bubble pizza.

There are many versions out there in the blog world, but this way happens to be our favorite.  We mix the sauce in with our biscuits and use a little extra because we love our pizza on the saucy side. The kids like it this way because it’s already in bite-sized pieces.  If your mouths are a little smaller than my groups, feel free to cut your biscuits into smaller pieces.

Biscuit Bubble Pizza

3 cans refrigerated biscuits, each biscuit cut into quarters

2 – 14 ounce jars pizza sauce

1 pound Italian sausage, cooked and crumbled

3 cups shredded mozzarella or pizza blend cheese – divided

pepperoni – enough to cover the top of the pizza

Directions:

Preheat oven to 375 degrees.  In a large mixing bowl, combine biscuit pieces, pizza sauce, crumbled sausage, and one cup of the cheese.  Pour mixture into a 9×13 baking pan or one of similar size.  distribute the biscuits to cover the entire bottom of the pan.  Top with 2 cups of cheese and pepperoni.  Bake for 30-40 minutes or until biscuits are cooked through and the top has started to turn golden brown.
