Bacon Wrapped Stuffing Tots

What’s better than stuffing at Thanksgiving dinner?  Leftover stuffing wrapped in bacon.  Seriously….it’s delicious!  The stuffing is basically “fried” in bacon grease in the oven……it gets crispy/crunchy and, of course,  gets that deliciously smoked flavor from the bacon!  You need to try these.

A few tips are to make sure that the stuffing is nice and packed together when you shape it into tots.  It will expand in the oven, so even though you think that the tablespoon might not seem big enough, just try it.  Another tip is that you can shape the tots when the dressing is warm.  (before packaging after dinner)  You can then pop them in the freezer for later use, or you can store them in the refrigerator for use this weekend.

 

Bacon Wrapped Stuffing Tots

3 cups leftover stuffing

1 pound of bacon slices

Heat oven to 425. Using a tablespoon to portion, shape stuffing into “tot” shapes and wrap each with bacon just so it overlaps about 1½ inches. Cut the bacon and move onto the next tots. Place on a parchment lined baking sheet. Bake for 25 minutes or until bacon is crisp.
