Roasted Grape Tomatoes and Paprika Honey Salmon

I get asked a lot what my favorite go-to meal is.  To be honest, I have a lot of favorite meals, but there is one in particular that works for all occasions.  It’s comforting, healthy, and requires less than 5 minutes of my time!  It even has minimal dishes, which makes it even better!  If it’s just my husband and me eating this dish, I usually skip the honey on the salmon, but I find my kids prefer it with even the tiniest bit if honey drizzled over the top before cooking.  If it’s just me eating, I also like to top my salmon with a little bit of feta cheese.  There are many ways you can make this dish your own, but once you try this out, you won’t believe how simple and good this is!

Roasted Grape Tomatoes and Paprika Honey Salmon

2 lbs grape tomatoes

2 tablespoons olive oil

1/2 teaspoon kosher salt

1/4 teaspoon garlic powder

2 pounds salmon, portioned into 4 pieces

1/4 teaspoons smoked paprika

1/4 teaspoon garlic powder

2 tablespoons honey

salt and pepper for salmon (to taste)

Directions:

Preheat oven to 375 degrees.  Place grape tomatoes in a 9×9 ovenproof dish or pan.  Add olive oil, salt, and garlic powder.  Toss to evenly coat the tomatoes.  Bake for 45 minutes or until most of the tomatoes have burst and they have started to brown.  Remove the pan from the oven and lay the salmon portions on top of the tomatoes.  Season them with smoked paprika, garlic powder, honey, salt, and pepper.  Place the pan back in the oven for 20 minutes or until salmon is just about to your desired level of doneness.  Switch oven to broil and boil just until the honey starts to bubble and brown.  Remove the pan from the oven and serve.
