Oreo White Chocolate Macadamia Nut Granola

So we have had some discussion in our house if this is a breakfast or dessert, but since I am the chef and did all of the cooking, I win.  Breakfast it is!  Haha.  Ok….not the most nutritious, but if I serve it over plain Greek yogurt, that makes it a health food, right?  I must admit, this would be incredibly good over ice cream, too, but I just haven’t gotten that far………..yet!

Oreo White Chocolate Macadamia Nut Granola

4 cups rolled oats

1/2 cup sunflower seed kernels

1 1/2 cups roasted macadamia nuts

1 cup shredded coconut

18 Oreo cookies, broke into pieces

1/2 cup chocolate syrup

1/4 cup coconut oil, melted (or vegetable oil)

3/4 cup honey

2 teaspoons vanilla extract

1/4 teaspoon iodized salt

1 1/2 cups white chocolate chips

Directions:

Preheat oven to 300 degrees.  In a large mixing bowl, combine oats, sunflower kernels, macadamia nuts, coconut, and Oreo pieces.  Set aside.  In another mixing bowl, stir together chocolate syrup, honey, oil, vanilla, and salt.  Pour the chocolate mixture over the oat mixture and stir until everything is evenly coated.  Pour the oats onto a lightly greased sheet pan and bake for 45 minutes, stirring once or twice while baking.  Remove the pan from the oven and let cool for 5 minutes.  Add white chocolate chips and mix them into the granola mixture.  Let cool completely and store in an airtight container.  Serve with milk, over Greek yogurt, or Ice Cream.
