These Hot Italian Beef Sandwiches are one of the easiest meals you could make for a crowd and the best part is that they are made in the slow cooker!
The beef chuck roast slow cooks all day long in au jus, french onion soup mix, Italian seasonings, and of course, a stick of butter. In the end, you have a perfectly tender beef that falls apart with a fork that works perfectly in a hoagie or brat bun.
I make my sandwiches, top them with provolone cheese slices, and then put them in a warm oven just until the cheese melts. If you don’t want to heat your entire oven, the microwave will work just fine. When the cheese melts, top the sandwiches with giardiniera for a little added crunch and pop of flavor. (My kids didn’t go for that, but the adults thought it was perfect!)
If you would like more sauce for dipping your sandwiches in, feel free to add a cup or 2 of beef stock.
Slow Cooker Hot Italian Beef Sandwiches
For Beef
3 lbs beef roast, raw (I used chuck)
5-6 whole pepperoncini peppers plus 2 tablespoons brine
4-5 hot Italian peppers plus 1 tablespoon brine
1 packet beef au jus mix
1 packet french onion soup mix
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 teaspoon dried basil
1 stick (1/2 cup) butter
For Sandwiches
Hoagie Buns
Provolone Cheese Slices
Giardiniera
Directions:
Place the beef in the crock of your slow cooker and top will the remaining ingredients, finishing with the stick of butter on top. Place the lid on your cooker and cook on high heat for 5 hours, or low for 8-9. Remove the lid and shred the beef with a fork and stir it into the sauce. Slice your buns open, leaving one side hinged. Fill with meat, top with cheese slices and place in a warm oven or microwave to melt the cheese and top with giardiniera, more pepperoncini, or hot peppers before serving.
