Slow Cooker Chicken & Broccoli

While this recipe is one that you can’t leave cooking all day, it is perfect for days when you are around the house, but don’t want to have a lot of active time in the kitchen or to make a mess of your stove!

*This recipe makes a lot, which is great for a family dinner and then freezing a portion or 2 for lunches later!

Slow Cooker Chicken & Broccoli

4 pounds chicken breasts

1 cup chicken stock

2/3 cup soy sauce

2/3 cup brown sugar

1 1/2 tablespoons toasted sesame oil

2 1/2 teaspoons garlic powder

2 teaspoons ground ginger

1/2 teaspoons crushed red pepper flakes

32 ounces broccoli florets

5 ounces shredded carrots

1/3 cup cornstarch

1/3 cup water

sesame seeds for garnish

Directions:

In a small bowl, whisk together the chicken stock, soy sauce, brown sugar, sesame oil, garlic powder, ginger, and red pepper flakes.

Place the chicken breasts in a single layer in the bottom of your slow cooker. Pour the sauce over the top of chicken breasts. Place the lid on the slow cooker and cook on high for 2.5 hours. Remove the chicken breasts from the crock and dice them into small bite-sized pieces.

In a small bowl or cup, make a slurry out of the cornstarch and water. Whisk the slurry into the sauce that is in the slow cooker. Add in the chicken, broccoli, and carrots. Stir until everything is evenly combined and coated in the sauce. Place the lid on the slow cooker and cook for an additional 30-45 minutes. Remove the lids and stir.

Sprinkle with sesame seed before serving. Serve over rice.
