Peanut Butter Fudge

The season of fudge is here!  Ok…there isn’t really a season that doesn’t work for fudge, but there is something that is so cozy about sitting down with a cup up coffee, twinkling lights, and a piece or ten of fudge.

Besides the amazing taste of this fudge, I love it because it only takes a few minutes to make and can be made now so that it can be ready for visitors all season long!

Peanut Butter Fudge

16 tablespoons salted butter (2 sticks)

2½ cups creamy peanut butter

2 teaspoons vanilla extract

¾ teaspoon kosher salt

2 pounds powdered sugar

Directions:

Combine butter and peanut butter in a microwavable bowl. Heat for 3 minutes on high. Stir. Microwave on high for 3 additional minutes. Remove from the microwave and stir in vanilla extract and kosher salt. Whisk until combined. Add powdered sugar and stir until well mixed. Pour mixture into a 9 by 13 baking pan that has been lined with greased parchment paper. Press fudge into the corners of the pan and make sure it’s even. Let cool in the refrigerator for about 2 hours or your freezer for about 30 minutes. Cut into cubes and store in an airtight container at room temperature.
