Apple Pie Spice Caramel Corn

This fresh homemade caramel corn is perfect for fall or any time of year. This extra soft caramel corn with the addition of the warm spices in apple pie spice adds an extra level of warmth and makes it extra crave-worthy! This is perfect for enjoying on the couch while watching your favorite hallmark movies, potlucks and parties, or even gift-giving. Even better, it’s ready in 10 minutes!

Apple Pie Spice Caramel Corn

8-10 cups popped popcorn, butter flavor – I use skinny pop brand

1 stick butter

1/2 cup brown sugar

1/2 cup light corn syrup

1/2 teaspoon kosher salt

3/4 teaspoon baking soda

1 tablespoon Apple Pie Spice (I used Craveable Kitchen)

1 cup roasted pecans (optional)

Directions:

Place popcorn in a large mixing bowl and set it aside.

In a microwave-safe bowl, combine the butter, sugar, corn syrup, and salt.  Microwave on high for 2 minutes.  Stir.  Microwave again on high for 3 minutes.  When the mixture starts to boil, microwave for 1 minute longer.  Remove the bowl from the microwave and stir in the baking soda and garam masala.  The mixture will foam slightly.

Pour the mixture over the popped popcorn, add the pecans, and stir until it is evenly coated.  Spread the popcorn out onto a sheet pan and let cool slightly before eating.  Store in an airtight container.
