Slow Cooker French Dip Sandwiches

Even though it’s still summer, our temperatures have recently taked a big dive and it had me craving something a little more hearty for dinner.  During the summer we eat a lot of sandwiches because of the kid’s busy sports schedules and it’s something that’s easy for the kids to take out into the backyard and eat.  I like this sandwich in particular because it gives us a reason to slow down, sit and the table and have a conversation. (The au jus isn’t really great for transporting sandwiches to the trampoline!)

I served the sandwiches with fries, fresh out of the air fryer and the boys all agreed that we should make this sandwich again!  They loved the tender beef and thought “the dipping sauce” was so amazing that they were even dipping their fries in it!

Slow Cooker French Dip Sandwiches

3-pound beef roast

2 cans condensed french onion soup

1 can beef consomme

6 cloves of garlic, fresh minced

1 teaspoon cracked black pepper

1/2 cup red wine

2 teaspoons dried rosemary

1 teaspoon dried thyme

Hoagie Rolls for Serving

Directions:

Place all ingredients in your slow cooker and cook on low for 8 hours or until your roast is tender.  Using 2 forks, shred the beef into large, but still sandwich sized pieces.  Serve the meat on rolls and serve the au jus in dipping cups.

6-10 (depending on roll sizes and appetites!)
