If you are anything like me, you are quick to fall in love with any recipe that contains the words fried and parmesan in the title! This recipe won’t let you down. These deliciously “fried” zucchinis can be prepared in a very hot oven, or in one of my new life-saver kitchen gadgets, the air fryer. After a dear friend let me use here for the first half of the summer, I finally broke down and got my own. I am in love….and the color is so pretty!
OK…back to the food. These are so quick to make! In fact, they can be done start to finish in as little as 15 minutes! A fresh from the garden, veggie-packed treat on demand!
2 small to medium sized zucchini, quartered lengthwise
3 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper, fresh cracked
2 teaspoons Italian seasoning
1/2 cup grated parmesan cheese
Directions:
Preheat oven to 450 degrees. (skip if you are using an air fryer) Place all ingredients in a resealable ziplock back, seal, and gently shake until even coated. Remove the pieces from the bag and place onto a well greased baking sheet or into an air fryer basket. Bake in oven at 450 degrees for 10 minutes or fry in an air fryer for 6-8 minutes at 400 degrees.
