This quick and easy side dish contains my two favorite vegetables and it’s so easy and flavor-packed, that it makes it’s way to my dinner table almost weekly. it goes perfectly with anything off the grill….you can even prepare it right on your grill if you have a pan that is all metal!
Garlic Mushroom and Burst Tomatoes
2 tablespoons olive oil
2 tablespoons butter
8 ounces sliced white mushrooms
1/2 teaspoon kosher salt
1/2 teaspoon cracked black pepper
1/4 teaspoon crushed red chili flake
2-3 cloves of garlic, fresh, minced
10 ounces grape tomatoes
Directions:
Place butter and olive oil into a saute pan and heat over high heat until butter is melted. Add mushrooms, salt, pepper, and chili flake. Saute until mushrooms are cooked through, have shrunk in size and have started to turn golden brown, about 5 minutes. Reduce heat to medium-high. Add garlic and saute for an additional 2-3 minutes. Add the grape tomatoes and arrange them in the pan so as many as possible touch the surfaces of the pan. Continue cooking on medium-high heat, stirring very little until the tomatoes start to burst and turn bright red. (about 8 minutes). Remove from the heat and serve.
