Whether or not it was the hummus or the brownie part of this title that caught your eye, you need to try this recipe at least once. This honestly tastes just like chocolate cake batter! (I should know….I make a lot of cakes for people!) It feels like such an indulgence and it is actually a great source of nutrition. I won’t claim that this recipe will 100% fit all of your resolution diets, but it fits my diet of “eat a little healthier” and it’s certainly a lot better for me than eating an entire row of Oreos!
This seemingly indulgent treat is made out of garbanzo beans, coconut milk, brown sugar, unsweetened cocoa powder, a pinch of salt, and vanilla and butter extracts. If you don’t want to put in the butter extract, you don’t have to, but it really does bring that cake batter taste home! Serve this with sea salt crackers, graham crackers, fruit, or over your toast in the morning. What are you waiting for?? Get to the grocery store now!
Chocolate Cake Batter Hummus
1 – 15 ounce can of garbanzo beans drained and rinsed
1/4 cup coconut milk, unsweetened (more if needed to blend)
4 tablespoons unsweetened cocoa powder
1/4 cup brown sugar (more or less as desired…..less if you want a more dark chocolate taste)
1/4 teaspoon iodized salt
1 teaspoon vanilla extract
1/2 to 1 teaspoon butter extract
Directions:
Place all ingredients in your food processors and puree until smooth. Scrape the bowl down with a rubber scraper and blend again. Serve.
