These granola bars are soft, chewy, and make the perfect snack or breakfast on the go. You can make the recipe your own by adding different fruits, nuts, or, my personal favorite, mini chocolate chips!
Chewy Granola Bars
2 3/4 cup crispy rice cereal (we use a gluten-free one)
2 1/4 quick oats
1/2 cup raisins, rolled in cinnamon sugar to reduce sticking (or other fillings)
1/2 cup corn syrup
3/4 cup packed brown sugar
3/4 cup chunky peanut butter (can substitute other kinds of butter if desired)
1 teaspoon vanilla
pinch of salt (if desired)
Directions:
In a medium-size mixing bowl, mix together the cereals, dried fruit, chips, or nuts. Set aside. In a heavy bottom saucepan, heat the corn syrup and brown sugar just until boiling. Remove the pan from the heat. Stir in the peanut butter, vanilla, and salt. Add the peanut butter mixture to the cereal and stir until combined evenly. Press the mixture into a greased 9×13 pan. (Similar to making Krispie treats) Let cool to room temperature. Cut, serve, and enjoy!
