Bread Pudding for One (or two)

While we have been cooped up in the house for the last couple days, I have been trying to keep warm by snuggling up with my heating blanket and a good book while I am not playing referee to the house full of stir crazy kiddos.  While my husband kept them busy this afternoon with a board game, I managed to make myself a little afternoon treat!  Just one portion….and I made it in and out of the kitchen before the kids really knew what I was up to!  (Don’t worry….there are plenty of treats for them!)

You can individualize this to suit your own tastes.  You can add raisins, sub dark chocolate or white chocolate, add nuts, change the spices, anything you want.

Individual Bread Pudding

1/2 cup milk (I used almond coconut milk, but any other milk or cream will work)

1 large egg

2 tablespoons sugar

1/2 teaspoon vanilla extract

2 tablespoons white chocolate chips

1/2 teaspoon cinnamon

(other spices if you want….I also used 1/4 teaspoon ground cardamom, 1/4 teaspoon ground ginger)

1 1/2 cups day-old bread cubes.  I used leftover brioche buns.

Caramel or Chocolate Sauce for drizzling

Directions:

In a microwavable safe mug or bowl, whisk together the milk, egg, sugar, vanilla, and spices.  Add the cubed bread to the bowl and stir gently to coat all of the bread and let it soak in the egg and milk mixture.  Microwave for 2 minutes or until there is no longer liquid in the bottom of the bowl.  (If there is still liquid after 2 minutes, microwave in 30-second increments)  Remove the bowl from the microwave and drizzle with warm caramel sauce.
